So flattered!

We had a Bake-off at work today. Three of us planned it and asked that our entire team (about 10 of us) participate. We asked other members of HR to judge as well as a few other esteemed participants. And we had about a week to prepare. I struggled a lot to figure out what to make. You see, I'm the "team mom" which means I make the birthday treats for everyone on the team. Whatever they desire, I prepare. Which also means that most of my best desserts had been tried. I wanted to do something different but honestly I'm not that creative. I sent Paul shopping at least twice for ingredients. At first I was going to make a cake in the crock pot but after testing some brownies and having my husband announce that a cake in the crock pot "just isn't going to win" (he was right) I needed something else. My aunt came to my rescue. She reminded me of a dump cake recipe that she'd put in the cook book she made for me years ago. Five ingredients. Simple. Especially good since I've been sick since Sunday and not really in the mood to make anything. So, I made two. One was apple and one was cherry. And I won. Even cooler is that one of my co-workers told me that she really liked my cooking and that I needed to make a cook book and she'd definitely buy it. What a cool thing to say!

So, here's the dump cake recipe:

1 sm. can of crushed pineapple
1 can of pie filling (any flavor)
1 dry cake mix (white or yellow)
1 c. pecans (optional)
1 stick of butter cut into pieces

Layer each item in a 9x13 pan. Put the butter on top, trying to cover all the top. Bake at 325 for 1 hour. Serve with ice cream of whipped topping (also optional).

How much easier is that?
