Accomplished!

We're having a weight loss challenge at work. While I'd like to lose weight, I chose to focus more on getting healthy and figured that in turn, I would lose weight. So, I participated in the group today. I'm not weighing in but am taking their thoughts and turning into action. Today they shared entrees. One my way home, I picked up ingredients to make two of the recipes. They were expensive (almost $40 for two dinners) but not unreasonable since I was cooking for three for two nights. You can't eat out for $20! The recipe for tomorrow night called for it to be made and then refrigerated for 8 hours. While I don't fully understand why, it did allow me to make two dinner tonight and then only have to cook one tomorrow instead of preparing and cooking.

Dinner tonight, chicken and orzo pasta with asiago cheese and peas was tasty. Emma even liked it. Granted, she liked it a little less when I informed her that it was a Weight Watchers recipe.

Is it good that I'm the chef in the family and am currently on a health kick? I think so. Hopefully it will help me and my family.

What is it that has to sit for 8 hours? I might have some insight into the logic behind it. I spend a stupid amount of time in the kitchen and reading the how and why behind my cooking :)
